Awhile back, I mentioned that Romance University's Ask An Editor column was tackling line edits. Writers send in their first 2 pages, the editors at RU go through them - line by line - to show you what an editor would do, give you feedback, etc. Then they put it all together to show how they'd revise it so you can compare the 2 versions.
