Hey everyone, say I was wondering if any one has press canned rice dishes? More specifically like Pork fried rice. We have a very simple and easy to make recipe (i can share if interested) and not to sure how to save it. Everyone here says its better than any they have ever had. It's pretty dry so would I just pack and can as usual or would I need to add some liquid? Thanks for the help.

I've never even heard of "press canned". What is it and how's it supposed to be done ?

Hey DIM TIm check out the link below or check out the Ball Jars web site. Pressure canning needs to be done with low acid foods for preserving them. thanks

MinnesotaPrepper-

Good video! I have a garden specifially grown for canning... everything from purple hull peas, green beans, tomatoes, bell peppers, hot peppers, cucumbers, etc.... but no potatoes. After watching your video I'm thinking I'll watch for potatoes on sale (happens often) and do what you did.

Did you ever notice a difference between the hot/cold packed diced potatoes??? I'm wondering if there's any reasoning why one is better than the other because of such a high starch content in the potatoes? Seems like I've heard something about not wanting to over cook high starch foods when you're canning.... but maybe that was just a dream. blink.gif
