There's a reception at the Marriott by the competition sponsors. If there's not much food, there is a good restaurant that overlooks San Francisco Bay and the runway out of the airport.

Oh Belle, my mouth is watering - I haven't had Walleye since my divorce. 10 years ago!!!


Last night was chicken breast and a bunch of grapes. Tonight will be dinner at the neighbor's house. Lunch is chicken/fruit salad with the leftover chicken from last night biggrin.gif .

Walleye is excellent: a ldelicate flavour with firm, flakey flesh..



In-laws over for dinner:

This is a fast and tasty recipe:



Brussels Sprout Salad with Almonds and Parmesan
Servings: Serves 10

Ingredients:
1 cup slivered almonds, lightly toasted in dry frying pan
2 pounds Brussels sprouts
1/4 cup olive oil or 3 tablespoons olive oil and 1 tablespoon truffle oil
3 tablespoons fresh lemon juice
2 tablespoons finely sliced chives
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
3 tablespoons finely grated Parmesan cheese


Directions:
-Peel away any yellowed outer leaves, wash and dry Brussels sprouts. Slice from stem to top as thinly as possible.
-In large bowl, whisk together olive oil, lemon juice, chives, salt and pepper. Add Brussels sprouts, almonds and Parmesan cheese. Toss until combined.




Paccheri with seafood

Lemon pudding cake

Didn't take anything out of the freezer, but I'm thinkin' along the lines of grilled pork chops, spinach w/caramelized Vidalia onions, whole grain Rotini w/creamy garlic & herb sauce, Carvel mini ice cream sammich for dessert.

I stopped at KFC on the way home and got hot wings. Now I am very full.

Gotta get to the grocery store tomorrow so I can do some actual cooking this weekend and next week!

I stopped at a farmers stand this afternoon and got lots of yummy fresh veggies, then I stopped at the grocery store and they had some beef tenderloin/filets on a "cook right away special" so I think they (2 very small ones) will be my supper with some fresh steamed veggies.

For my lunch tomorrow I'm going to make a ham salad stuffed tomato, and bring a few sugar snap peas to munch on.

Tomorrow's dinner will be ribs and corn on the cob and Tuesday will probably be a small roast in the crockpot - a friend will be coming for dinner, so I'll want something ready after work.

Hmm, I'm making myself hungry with all this food for the week talk. tongue.gif
