I'm on an Indian-food kick at the moment, so maybe I'll say Palak Paneer--sauteed cubes of homemade cheese in a spinach-and-potato stew, served over brown rice. Indian's great--easy once you've got the ingredients, healthy if you go light on the ghee, good strong flavors, impresses the girls, overawes the guys...
